Swedish Meatballs

Ever have those moments not knowing what to cook for dinner? Well this was one of those nights for me.  I don’t measure when I make this dish. I kind of just go with the flow. LOL!  Last nights dinner…Delicious!

Swedish Meatballs and Mashed Potatoes with Mushroom Gravy

Meatball Recipe

3 lbs. ground beef
1/4 cup chopped onions
2 gloves garlic chopped
1/8 cup chopped parsley
2 eggs
1 cup breadcrumbs
2 tbs. worcestershire sauce
1/2 tbs. garlic salt
Salt & black pepper

Mix all ingredients together and form into meatballs, place on a baking sheet and bake in the over at 400° for 30 minutes (depending on oven maybe a little more or less).
*save all the brown bits from the meatballs for the gravy

Drippings and brown bits
1/2 cup heavy cream
1 cup chicken stock
2 tbs. flour
4 tbs. salted butter
1/2 package of mushrooms (chopped)
Salt & black pepper to taste

Add drippings and brown bits with 4 tbs butter to a skillet and lower heat to medium. Add the mushrooms and cook until softened, about 5 minutes. Season with salt and pepper. Sprinkle in the flour and cook, stirring, for 1 minute. Whisk in the chicken stock and bring to a simmer. Reduce the heat to low and stir in the cream. Cook until the gravy thickens, 1 to 2 minutes.

I like to add the meatballs in the gravy and simmer for 3-5 minutes on low heat.
