Almond Chocolate Chip Cookie Recipe Adapted from Minimalist Baker
1 1/4 cup almond flour
1/2 cup unsweetened shredded coconut
1/2 tsp baking powder
1/4 tsp salt
1/2 cup coconut sugar
1/4 cup dark chocolate chips (Didn’t have any mini chips so I chopped the regular chips to smaller pieces)
1/3 cup chopped dried blueberries & cherries combined
*mix all dry ingredients together
1 tsp honey
1 tsp molasses
3 tblsp coconut oil
1 tsp vanilla
*Mix all wet ingredients
Combine both dry & wet ingredients refrigerate for 30 minutes.
Be sure to line pan with a silicone pad or parchment paper.
Form 1-1/2 inch balls & place on baking pan. Press down lightly until flat. Bake at 375 for 12-15 minutes (depending on your oven might be less time).
