Honey Roasted Chicken with Coconut Rice and Beans

Coconut Rice and Beans Recipe (From wishfulchef.com)
- 1 cup long grain rice
- 1 tablespoon oil or butter
- 1 shallot, chopped
- 1 clove garlic, chopped
- 3/4 cup coconut milk
- 1 cup water (I substituted for chicken stock)
- a pinch of ground nutmeg
- 1 teaspoon salt
- 1 15-ounce can of black beans, rinsed and drained
Add butter or oil in a small saucepan over medium heat. Stir in chopped shallot and garlic, cook until soft, about 3 minutes. Stir in rice then pour in the coconut milk and water. Season with nutmeg and salt. Bring to a boil, then reduce heat to medium-low. Cover and simmer until the liquid has been absorbed and rice is tender, about 18 minutes. Stir in the black beans and cook for a few minutes until hot.
