Shrimp and Zucchini Lettuce Wraps

This night was one of those nights when I had no idea what I was going to make for dinner. I knew it was going to be shrimp but shrimp with what? LOL!  Anyway here is the recipe for those that asked earlier.  Enjoy!

Shrimp & Zucchini Lettuce Wraps

Ingredients

  • 25-30 medium shrimp deveined and unshelled (this may seem like a lot but trust me it’s not)
  • 2 medium zucchini’s diced
  • 1 bell pepper diced (any kind)
  • 4 garlic cloves minced
  • 1 stalk green onions diced
  • 1 tablespoon fresh lemon juice
  • 1 tsp red chili flakes
  • 1 tablespoon soy sauce (I used kikkoman)
  • salt and black pepper to taste
  • 2 tablespoon oil

Instructions

Use a wok or a large pan if you have one. Heat the oil on high then carefully add the shrimp, season with salt and black pepper. Cook for 2-3 minutes and stir a few times.  Once the shrimp has cooked remove from the pan. Reduce to medium heat then add the garlic, bell peppers and red chili flakes.  Let this cook for about 3 minutes then add the zucchini, season with salt and black pepper and cook together for about 7-8 minutes. Toss a few times then add back the shrimp and add the green onions. Let this cook together for a few minutes. Add the soy sauce and lemon juice stir a few times and simmer for 5 minutes.  Ready to serve with lettuce, noodles or rice. 🙂
