Sunday mornings are fun when I decide to make breakfast. This particular morning I decided to do something a bit different. So here it is…Baked Eggs.

I didn’t follow any recipe just started adding ingredients that I had available at home. First started with crispy bacon (which I chopped and fried before adding to the dish), sautéed fresh spinach and mushrooms and asparagus. I added these 4 ingredients (crispy bacon, spinach, mushrooms and asparagus) into a baking dish then topped with 2 eggs and ¼ cup of heavy whipping cream or coconut cream whichever you prefer. Bake at at 375 for 20 minutes or until eggs are cooked.  Once done remove from oven and let it cool for about 5 minutes before serving. Be careful the baking dish will still be hot.
