I’m always thinking of what’s for dinner and most times for me it’s on the fly meaning it kind of comes to me as I go. LOL! Who does that?!
This past Sunday evening I cooked a pan seared Swai (white like catfish) served on top a bed of sautéed spinach and garlic w/ diced carrots and asparagus. Oh and can’t forget the lemon butter sauce which was actually my first time making. I have to say it was good! 🙂
Then last night I did grilled shrimp with baby bell peppers on skewers served w/ a mini medley of roasted potatoes and mushrooms along with sautéed kale. Talk about let’s get healthy!!
Both dinners were great and enjoyed by my FamBam (all 2 of them and my furry boy Koa – don’t worry he only ate the veggies). Trying to do my part making healthy choices and of course I do have a tendency to sway but I try. I can’t help myself…I LOVE FOOD! 🙂
