Chicken Mushroom Spinach Linguine with a Red and White Sauce

Hi Everyone!!  After an eventful weekend at IFBC in Seattle (2 weeks ago) and not being home pretty much the whole weekend I was asked to make pasta for dinner by my sister…her wish is my command.  Geez! I’m such a good sister so this is what I whipped up for her.  I didn’t follow any recipe just kind of do what I always do…make it up as I go. LOL!  She did enjoy every single bite of course 🙂

Although I have to admit I did cheat a bit so rather than make the marinara sauce I purchased a jar of the 365 brand of Tomato and Basil from Wholefoods which was actually pretty good.  When you don’t have as much time to prepare food who said you can’t cheat a little bit. But I know homemade is always best so have at it!

Chicken Mushroom Spinach Linguine with a Red and White Sauce Recipe

2 chicken breasts – roasted & cut into bite size pieces
1 pint heavy whipping cream
2 cups fresh spinach
1 1/4 cup – shredded parmesan or 3 cheese blend of fontina, asiago and parmesan
1 jar of marinara of your choice
2 cloves fresh chopped garlic
1 cup sliced mushrooms
1/2 stick of salted butter
1 – 16oz package/box of Linguine
Salt & black pepper to taste
Garlic salt


Boil water and cook pasta – follow directions on the package/box.  Once done set aside.

Melt butter in a large skillet or pan in low/medium heat then add the sliced mushrooms, season w/ a little salt and black pepper. Cook this for 5 minutes until tender. Add the heavy whipping cream and shredded cheese be sure to stir to avoid the cheese from sticking to the bottom of the pan. Once the cheese has melted remove the pan from the stove, add the cooked pieces of chicken and stir until every piece is coated then add the fresh spinach combine then set aside.

Pour the jar of marinara sauce into a saucepan and simmer for several minutes until hot. I added a few seasonings to the sauce just my preference but it’s totally up to you.

Take a portion of the cooked pasta and a ladle of the chicken cream sauce mix together in a separate bowl.  When it’s ready to serve take a clean plate or bowl whichever you prefer and ladle the bottom with the red sauce and the place the mixed pasta on top.  Top of with shredded parmesan or red pepper chili flakes (optional).
